Spooky and easy pumpkin recipes that will help you go further for less this Halloween
It’s Halloween – and many families will be busy carving pumpkins.
If that’s you, be sure to save the leftover flesh.
Then you can try these scary and easy pumpkin recipes from food experts. . .
ABIGAIL ROBERTS (sports nutritionist at bulk.com): Pumpkin hummus is a great way to use up leftover meat.
Thanks to chickpeas, hummus is already high in protein and fiber, so adding pumpkin to this easy dip is a juicy bonus.
Just cut it into chunks and roast it, then add it to the food processor along with your usual ingredients: chickpeas, tahini, garlic, olive oil, and lemon juice.
ROBERT CARTER (Owner of fruit delivery company gogofruitbasket.com): Roast the pumpkin seeds in the oven for ten to 15 minutes, then add a little seasoning.
It’s a tasty snack when watching a scary movie.
SVANFELDT SIGN (Chief Nutritionist at Lifesum nutrition app): For a healthier alternative to cakes and pies, make sweet no-bake snacks.
Try 240g pumpkin puree with 95g shredded coconut, 4 tbsp cocoa powder and 2 tbsp maple syrup.
You can also add chopped walnuts and cinnamon, nutmeg and a pinch of salt. Roll into balls and refrigerate for snacking.
THRIFTY LESLEY (low-budget food blogger): Why not make a pumpkin and coconut curry soup?
It’s easy to whip up a batch for four, for around 33 pence per person.
Or use the seeds to make a delicious sage, lemon and pumpkin seed pesto.
Or simply chop the flesh, roast it with garlic and olive oil and toss it into the pasta.

GREG FRASER (founder of The Doggy Baking): Did you know pumpkin is a superfood for dogs?
It is excellent for their intestinal health and contains a lot of fiber.
The seeds can be used as dog treats, as they are rich in magnesium.
And you can feed them steamed pumpkin.
